From scratch buttermilk pancakes make home-made breakfast a delight. Try these with your favorite maple syrup.

 2 tbsp Unsalted Butter, Melted
 2 Eggs
 1.50 cups All-purpose Flour
 1.50 tsp Baking Powder
 2 tbsp Sugar
 0.25 tsp Salt
 0.13 tsp Cinnamon
 1 cup Buttermilk
 1 tsp Pure Vanilla Extract

Lightly beat eggs until combined.

Sift the flour and baking powder together to aerate the flour.

Stir in the sugar and salt until evenly mixed. Make a well in the middle with a spoon.

Beat together the milk, eggs, and vanilla until well blended. Pour a little of the mixture into the well and whisk until combined. Repeat until all of the mixture is whisked in.

Whisk in the melted butter until the mixture is smooth.

Cook Pancakes for a few minutes, and flip and cook until golden and cooked all the way through.

This pancake recipe actually started as a regular milk recipe, but was transformed by Saphire into a buttermilk recipe. It will work with regular milk instead of buttermilk.

This recipe creates 8 pancakes or 12 medallions. It can be doubled without issues.

Variations

The following are modification suggestions for this recipe.

Blueberry

1 cup Blueberries
2 tbsp Flour

Coat the blueberries in the flour. Once coated, fold the blueberries gently after the butter.

Chocolate Chips (or other morsels)

1 cup Chocolate Chips (or other flavored chips)

Fold the chips into the finished batter.

Cinnamon

1 tsp Cinnamon
1/4 cup Sugar
2 tbsp Unsalted butter, melted

Preheat your broiler while mixing the cinnamon and sugar, and melting the butter. Brush the butter onto each of the pancakes, then press each side into the cinnamon sugar mix and then place the pancakes on a baking sheet. Cook under the broiler until the sugar is bubbling and melted. Let sit for about a minute, then flip and repeat broiling. Served immediately plain, with honey or Greek yogurt.

Banana Stack

Plate a pancake and spread Greek yogurt on it. Evenly place banana slices, then top with another pancake and honey.
