Cut half of the strawberries into quarters.
Cut the remainder into halves.
Put the strawberries into a sauce pan, then add the sugar and sweat for 20 minutes.
TIP - Sweating overnight yields the best results.
Add cinnamon and vanilla to the sweated berries, then turn on the heat.
Boil for 15 minutes, stirring constantly.
Remove from heat. Can be served hot or cold.
