Rich and fudgy, this gluten-free treat is delicious. Optionally add walnuts, hazelnuts, chocolate chips or caramel.

 13.50 oz Confectioner's Sugar
 3 oz Cocoa Powder
 0.25 tsp Salt
 4 Egg Whites
 1 tbsp Pure Vanilla Extract
 1.50 cups Toasted Walnuts, chopped (Optional)

Preheat oven to 350F.

Sift the sugar, cocoa powder, and salt together into a bowl.

Add the egg whites and vanilla.
Mix just until dry ingredients are moistened.

If adding walnuts, chips or other mix-ins, gently stir them in.

Scoop onto parchment lined sheet pans.

Bake about 20 minutes, until the tops of the cookies are glossy and lightly cracked, and feel firm to the touch.
